Pastry & Me

I consider myself as one of the lucky people in life who have found their passion and what they want to do for the rest of their life.   I see is as a form of art mainly and i would like to help the society to start seeing it as listening to music , or seing a beautiful piece of art but feeling it through your taste buds.

Miso and coffee  curd

egg yolk - 100gr
sugar-100gr
cream-200ml
miso paste -50gr
cofee-30 ml
gelatine leaves- 1/1/2
butter-150

 

We start by adding the sugar to the egg yolks and whisking it until pale.While we do that we put the cream on the stove a let it come to a boil . Once we have achieved that we pour the cream little by little into the egg yolks while whysking in order to temper them, next thing we do is pour this mixture back on the stove and stirr it on medium heat constantly until it has thickened or reached 70 degrees celsius.After that we add the miso paste and the cofee,now that it has slightly cooled down we start adding cold cubed butter bit by bit until incorporated , preferably using a hand blender .Finally we add the gelatine mix agan and cover with stretch in contact with the mixture , until fully cooled down , depending how thinly the mixture is spreaded , is what the chilling time depends on mainly.

Healthier and less sweet version of macarons

1.egg white 55 grams
2. brown sugar 30 grams
3. powdered brown sugar 150 grams
4.  almond flour 150 grams 
5. egg whites 55grams
6. water 45mil
7.white sugar 150 grams

 

Step number one is to whip the egg whites and the brown sugar , while they are forming their desired stage of whipping we move to step number three and start the sugar syrup , we let it come to a boil without stirring once it has reached 118 we start slowly pouring into the already formed french coconut sugar merengue .After incorporating everyting we let the mixer tun until the mixture has cooled down and has formed stiff peaks  .Next we mix the flour sugar and egg whites together, just until incorporated and to that we start to add one by one the merengue by slowly folding it each time in order to keep the air inside the mixture.Once everything is combined we pipe the macarons , we let them dry in room temperature for two to five hours or until the top has dried a bit .And finally we bake at a preheated to 155 degreed celsius oven for twelve minutes.

Healthy brownie cookies 

dark chocolate 200 grams

coconut butter 100 grams

eggs 2

coconut sugar 120 grams

spelt flour 120 grams

baking powder 2 grams

pinch of salt

- First step is to mix the butter and chocolate and melt it , after that we whisk the eggs and sugar and add the chocolate mixture to that. Next we mix the flour salt and baking powder and we sift it into the liquid mixture in two times by folding it until incorporated . We let the mixture rest until set , we form into balls and bake at 165 degrees for 15 minutes . Best is to serve them after being refrigerated.
